Please note that sometimes the appearance of these dyes inside the pot can be a cause for concern as they can cause “mold”, white and circular marks on the cocoa chocolate. We can assure you that these marks are not mold and are a natural separation process known as cocoa butter bloom or “fat bloom”. This “bloom” occurs during the manufacturing process when the coloring is cooled or tempered, resulting in uneven crystals. Mold needs water to grow, and chocolate is classified as anhydrous (does not contain water). If you remelt the chocolate coloring, the marks will disappear and it will work and taste as expected.
